Week beginning June 1st - English Abundance

Growing in an abundance this time of year are foraged goods, these edible plants are used in our cooking from time to time. Ingredients that were once a common part of our diet until the connivence of supermarkets made foraging less of a necessity.

This week I've incorporated foraged ingredients into all 3 salads at Eastcastle street. All very pleasant and non threatening to the eye. First we have a chilli beef salad with loads of raw fibre from carrots, cucumber and ice berg. The salad is then dressed in a creamy pineapple weed dressing. Pineapple weed is a close relative of chamomile and as the name suggest smells and taste of pineapple. Commonly grows anywhere there is grass this weed literally grows all around us and often going unnoticed. Our chilli beef salad will also be garnished with rosy garlic flower, pretty little pink buds that taste like garlic.

Our second salad is another combination of raw and cooked but this time vegetarian. Raw red cabbage and radish tossed in a zesty lemon and lime dressing then layered with roasted sweet potatoes that have been tossed in a buckthorn mayonnaise. Buckthorn berried is an ingredient that I use a lot in Kaffeine. These bright orange berries grow in coastal areas and are rich in vitamin C, amino acids and antioxidants. This salad will also be garnished with black mustard flowers, a member of the cabbage family these flowers have a fiery wasabi flavour and great for adding more depth and texture to salads. 

Lastly our third salad of green beans has one of my all time favourite foraged ingredient added, honesty seed pods. As a member of the cabbage family these contain mustard oils and consequently are rather piquant. They are usually no bigger than a 2 pence piece and resemble mange tout. You should try them... honestly... 

Down at Kaffeine GTS Khan is breaking out the filo pastry to create a tart filled with some of summers best greens, leek and cabbage. All married together with feta, dill and pine nuts. This will be complimented by the salads, from protein rich beef and edamame to a very healthy and cleansing mixture of puy lentils, grapefruit, alfalfa sprouts and a hot Tunisian harissa dressing.

Week beginning May 25th - Post Bank Holiday - Pre Summer

Post bank holiday and a good reason to keep the menu focused on healthy, fresh and vibrant. This week we shall be cleansing our bodies with fibre, grains, protein and a catalogue of summer vegetables. Also down at our Eastcastle street store all salads and along with the colourful tuna bake are all gluten free, great for keeping our tummies trim. One less thing to feel guilty about after what would have been an indulgent long weekend for most. 

Also back on the menu for a second week is sea kale broccoli. This foraged vegetable is a member if the cabbage family and grows wild along shingle beaches. The broccoli heads pop out in May for a couple of weeks each year and have a stronger broccoli flavour than sprouting broccoli. But more surprisingly it has the distinct aroma of honey coming from their floral buds.

Over at Kaffeine GTS Khan and I seem to be thinking alike, we write our menus separately and I've noticed there are a few similarities between our menus. Unintentionally we've both put apricot and almond muffins on our menus, so the competition is on 'who does it better?'


Come into our 2 stores this week and scrutinise over our muffins, best served with coffee.

Week beginning May 18th - Protein (ECS) and Mexican (GTS) menus

Welcome to another week at Kaffeine, now serving you 7 days a week from 2 locations. This week’s inspirations are Mexican at GTS (Great Titchfield Street) and Protein at ECS (Eastcastle Street). 

Chef chilli con Khan has drawn her menu inspirations from north Americas Mexico; expect to find black beans, spicy chicken fajita's, avocado salsa, chipotle chillies and chilli con vegetables. I’m probably going to discretely excuse myself one day this week from ECS to have Khan's mexi lunch...

Down the road at ECS I will be creating a healthy protein enriched menu, the reasons are wholly selfish but everyone can benefit. Recently I did something unexpected I joined a gym. Though this may be normal for most people the gym is something I had avoided with a passion. My perception of gymnasium's was men and women showing off their fit and toned bodies while getting even more ripped. This definitely does happen, but I also noticed that 60% of gym goers are physically very normal, people who don’t obsess but want to live a healthy lifestyle, this is an approach I can appreciate. Saying that I have challenged myself to getting a slamming bod for one summer, I'm doing this with a healthy ego and will maintain a shirt on when walking through Regents Park on a mildly warm day. Expect to find lean mean ingredients that are high in protein, fibre and vibrancy. From tuna to turkey, quinoa to tofu and fresh garden peas, all fuel for a stronger healthy body.

Week beginning May 11th - Introducing the Match Powder Energy Slice

This week at Eastcastle Street we welcome a new sweet delight, low in sugar, high in energy and amino acids. A name is still to be decided for this fun, vibrant, raw and edible item. Perfect paired with a coffee of your choosing, the main elements are matcha powder with almonds, honey, raspberry and passion fruit filling; all covered in white chocolate. 

Matcha is made from high quality green tea leaves which is then dried and ground into a bright green powder. Originally from Japan matcha has been served during Buddhist tea ceremonies for 900 years. Matcha also contains caffeine and a well know amino acid stimulant called L-Theanine, good for staying alert and improving concentration.

Another caffeinated food appearing on our menu at Eastcastle Street is a beef pie, beef braised in coffee making for a rich savoury flavour. Encased in flaky pastry and topped with mature cheddar, naughty and best eaten with a mix of our three healthy salads.

At Great Titchfield Street Khan is making the most of springs produce, from lemon roasted lamb in a salad of cherry tomatoes, peppers and pesto or radish, apple, carrot, red cabbage slaw with herbed yoghurt dressing.

Week beginning May 5th - Colours of Spring

Last week Peter, Claire and I sat down for a constructive meeting regarding the display at Eastcastle Street. Though the food is being well received there is always room for improvements. I call this evolution. One of the major issues is everything is looking a bit too brown, especially now that we brand half our food items with brown paper and string. The simple solution is to change the colour of the paper to white, easily done. We've also revamped several of our fixtures for better contrast of colour. Such as our breakfast brioche which was predominately made up of white and brown forms of carbs and protein. Now the brioche is made with red smoked paprika, with grilled courgette, red onion, baked egg, calvados mash and a very herby crème fraiche, loads of colour, flavour and contrast; and now becoming more popular at Eastcastle Street. 

This weeks menu theme at Eastcastle Street is 'rainbow' out with the brown and in with a bow. Expect to see a clash of colours to rival any display, from a salad made with grilled prawns, mango, pickled mayer lemons with chilli, avocado, red onion and coriander roasted cashew nuts, to a gratin tart made with new potatoes and sweet corn and topped with avocado and herb salsa. Based on my 83 year old granddads recipe, this gratin has made him quite popular among the other widows in his walking group.

Down at Great Titchfield street chef Khan has also devised a vibrant colourful menu with loads of spring produce. Making a salad of mixed coloured rainbow radishes with green beans, goats cheese, and black sesame seeds. From classic french influences to indian heat khan is also making a tandoori chicken salad, super tasty and incredibly fresh. Lastly I must mention the blueberry and bran muffins are back at GTS, my all time favourite muffin variety. 

So come into our cafe's this week and sample this weeks rainbow complimented with a coffee of your choice.

Week beginning April 27th - Spring Menu Inspirations

This weeks menu at Eastcastle Street is courtesy of manager Gina. Earlier today she asked if I knew what next weeks menu inspiration will be? I replied 'I have no idea, but maybe we'll visit north of Burma (last weeks menu) and do a Bangladesh theme'. Gina then suggested 'Spring' as an inspiration and a new menu was born. 

Spring also ties in nicely with the boxes of pre-orded mayer lemons that I received today. Mayer lemons is a citrus fruit native to China and can be described as a cross between a lemon and mandarin. Though still sour you can eat a mayer lemon on its own as they have a slight sweetness to compensate. The skin is thin and has a fragrant smell similar to oranges. This week the kitchen team is very excited to be incorporating these wonderful fruits into our tart with a famous spring time veg courgettes. Lemons and courgette have always been a well matched combination and now they will live happily together in our lunch time tarts, buttery, crispy, sharp and lastly mallow. 

If you're like me and against the grain you'll be pleased to know that at both Kaffeine stores all 6 of our salads are gluten-free. Substance and freshness using ingredients such as grilled salmon, heritage tomatoes, quinoa, spring lamb and of corse the king of spring, asparagus. 


No matter what your diet is we have it covered so come in, eat and get caffeinated.

Week beginning April 20th - Bumese menu

Still sticking with southeast asian region we head north of Thailand to Burma. Though I have never been to Myanmar it represents a special relationship and friendship I share with 2 of Kaffeine's staff. Khan and Win are both from Burma, I've worked with Khan for the last 4 and half years at GTS and Win for almost 2 years. If you read these blogs regularly you'll know Khan has taken charge of GTS kitchen and I poached Win for ECS. 

This weeks menu at Eastcastle street is dedicated to them and their culture, starting with a salad made with pickled tea leafs called Laphet Thoh. This is perhaps Burma most famous dish mixing together pickled green tea with chickpeas, peanuts, tomato and chilli. 

There is also a salad made with Udon noodles mixed with a spiced polenta sauce, crispy onions and pickled onions. It's a matter of opinion but this is also considered Burma's most famous fish. 

This weeks tart are fishcakes made with tofu, the fish base is a mix of salmon and cod win with smoked tofu and a ginger curry. Then fried until golden, Burma's equivalent to fish and chips.

Back up at the original Kaffeine Khan is working her fusion of Asian, Mediterranean and European magic. With chicken marinated in molasses, bulghur wheat, red pepper, courgette, pomegranates seeds and parsley salad. There is also a pomelo salad with mango, shallots, pickled ginger, chilli, herbs, peanuts,  and black sesame seeds. Last of the trios roasted beetroot, pickled radish, ricotta and walnuts, classic British fair.
